I sometimes find myself yearning for the holidays, even during the height of summer. That’s why autumn is my favorite time of the year –– it represents the start of the holiday season. The weather turns cool and crisp, decorations grace homes and storefronts, and fall fare like apples, pears, pumpkins, and squash fill the produce section in grocery stores.
As a denizen of Southern California, where summer weather is frequently the norm, I don’t get to experience a very lengthy autumn. So I bring autumn to me by cooking dishes reminiscent of the season. One such dish is Munchery’s Herb Roasted Pork & Kale Stuffing. I purchase premium pork loin, which I rub with fresh herbs and then roast until tender.
