Recipe for The Slanted Door Chicken Claypot Cooking Kit

Clay pot or sauce pan
Begin by blotting the diced chicken thighs with a paper towel to remove excess moisture. Then coat the chicken with 1 teaspoon of oil and season with the chicken rub. Let it sit for 5 minutes to absorb the seasoning.
- Prep your ingredients by chopping the garlic cloves, slicing the shallots in half lengthwise and then into strips, and slicing the ginger into ⅛ inch slices (you will only need 5 slices). Heat 1 tablespoon of oil in a saucepan (or a clay pot if you have one). Once the oil is heated, add in the chopped garlic, shallots, and ginger. Sautée for about 1 minute then add in the claypot sauce and bring it to a simmer. For some extra spice, add in Thai chili (half or whole depending on how spicy you like it).
- Add in the marinated chicken thigh to the pan (or clay pot), stirring frequently to keep it at a gentle simmer. Cook for about 15 minutes or until the chicken is fully cooked. Evenly divide the chicken into two bowls and top with the cilantro sprigs.
