  1. The Slanted Door Chicken Claypot by Munchery

    Begin by blotting the diced chicken thighs with a paper towel to remove excess moisture. Then coat the chicken with 1 teaspoon of oil and season with the chicken rub. Let it sit for 5 minutes to absorb the seasoning.

  2. Prep your ingredients by chopping the garlic cloves, slicing the shallots in half lengthwise and then into strips, and slicing the ginger into ⅛ inch slices (you will only need 5 slices). Heat 1 tablespoon of oil in a saucepan (or a clay pot if you have one). Once the oil is heated, add in the chopped garlic, shallots, and ginger. Sautée for about 1 minute then add in the claypot sauce and bring it to a simmer. For some extra spice, add in Thai chili (half or whole depending on how spicy you like it).
  3. Add in the marinated chicken thigh to the pan (or clay pot), stirring frequently to keep it at a gentle simmer. Cook for about 15 minutes or until the chicken is fully cooked. Evenly divide the chicken into two bowls and top with the cilantro sprigs.
