Our 1 Year Cheddar has a compact, semi-firm paste with an inviting aroma and immediate notes of fresh milk and cultured butter. The flavor develops into a hint of caramel, brown butter, and notes of freshly mowed grass; a little salinity pops up just before the sweet, gently lactic finish. A pleasant table cheese sure to please every palate, 1 Year is also a great melter. Blend with stronger cheeses for a perfect mixture for baking or cooking. Enough personality to stand up to cheddar twice its age. Medium in intensity, with buttery flavors and a creamy texture. Aged at least 1 year.
