While researching Southern and soul food, we became intrigued with the many links to West African cuisine. Stews and starchy vegetable dishes are featured prominently in that part of the world, and we thought that a mixed veggie bowl would be a great way to showcase those flavors. Roasted sweet potatoes tossed in North African spices are featured on a bed of steamed rice with black eyed peas, sautéed collard greens, roasted red peppers, and fresh green beans. A flavorful coconut-peanut curry blankets the dish with a delicious extra layer of flavor. Tasty, filling, and vegan too!
