This sharp white cheddar is aged two years to bring out some of the acidic characteristics. Layer over shaved blueberry bread from the renowned Larder bakery, and top with something sweet (fresh honey & dried apricots), something tart (red grapes), something nutty (artisinal marcona almonds), or something unexpected (pea sprouts). This cheese plate is practically begging for a great bottle of wine, but it holds up just fine on its own.
