With colder weather approaching, we're hitting the peak period to enjoy this selection of cow milk cheeses from the Alpine mountain region. Weinkase Lagrein - this Northern Italian cheese is soaked in the area's famed Lagrein wine during the maturation process, resulting in a gorgeous mottled, herbal rind. The paste is smooth, almost sponge-like, with a mild flavor but an aroma that packs a garlicky punch. Challerhocker - watch out - this Swiss miss is insanely addictive. Made from raw cow's milk, it's nutty and butterscotch-y, with a light crystalline crunch in the firm paste. Everything you love about classic swiss cheese, but refined times 10! Chiriboga Blue - you don't find a lot of cheese produced out of Germany, so when one comes along, you know it's going to be special. This cheese has a moist, cream-cheese like paste, with a lovely balance of sweet to tame the boldness of the blue veining. A great gateway blue for non-blue lovers! Cheeses are served with forest berry jam, maple-glazed walnuts and caraway-rye crackers, all made in-house.
