Say hello to pecorino, your new favorite grating cheese. Pecorino is a lot like Parmesan, in that they’re both Italian, they’re both hard, aged cheeses, and they’re both outstanding over pasta dishes. The difference, though, is that pecorino is made from sheep milk, whereas Parmesan is made from cow milk. The sheep milk makes for a richer, more strongly flavored cheese with a wonderful flavor all its own.
