This salad takes me back to the cold evenings in North Beach, sixteen or seventeen years ago. Warm goat cheese coated in chopped and toasted pine nuts atop baby spinach, frisée, sliced shallots and crispy apple wood-smoked bacon tossed with a savory apple cider vinaigrette. Remember, you can always make sure your goat cheese cake is ready by touching the center of the cake and feeling if it is just soft. Enjoy!
