Beef Chimichurri

Chimichurri, or Argentinian pesto, is full of the herbal scents of cilantro and parsley, spiced with chiles and smoothed with olive oil. It was first created to preserve the flavor of Argentinian beef, some of the best in the world. Here, tri-tip steak is rubbed with the pesto, marinated overnight, then quickly grilled and sliced thin. The steak is served in the simple Argentinian style with roasted sweet potatoes and a clean, fresh salad of tomatoes and shaved red onion.

I loved this meal. I am a huge fan of chimichurri! The tomato salad was very flavorful. I was hit with a huge amount of garlic eating it... luckily I love garlic. But my husband said I was oozing garlic scent for two days afterward! Haha!

This was so GOOD! Meat was tender, very fresh. The chimichurri sauce was perfection.

The flavors of the sauces were great! The steak was ehh, a lil tough but edible. And the potatoes were good, not great. But I enjoyed them more than the potatoes. The sauces are the saving grace of this meal.

What happened to the potatoes.. why were they cut into tiny pieces like that?. I've never seen potatoes served this way.
