We tend to think of "French" as a synonym for "fancy," but this simple meal is equally at home in a bistro in Paris or a casual restaurant in your own neighborhood. The centerpiece is a nicely seared piece of coulotte, along with thick-cut roasted potato wedges (much heartier than the French-style shoestring fries), and a simple salad of mixed greens with shaved red onion, cherry tomatoes, and a red wine vinaigrette.
