Bucatini means "little bones" and is the perfect way to explain this thick noodle with a hollow center. This classic dish hails from Amatrice (ah-ma-tree-chay), which is a small town outside of Rome. Thin sliced red onion is sauteed with garlic and pancetta, then hit with roasted tomato along with a pinch of red chile flakes. The dish is finished in typical Roman fashion—with fresh torn mint. The herb adds a cooling contrast to the sauce. So simple, yet so good!
