We've taken the flavor and freshness of a caprese salad and turned it into a perfect summer meal. We start with a mix of Satur Farms baby arugula, basil, and mint, toss in Sun Haven Farm's grape tomatoes, and top with a creamy, fresh burrata marinated in olive oil. We add a base of steamed farro for a healthy heartiness and a side of lemon-poppyseed dressing for a bright twist.

I did not like the mint or farro at all. Would be much better as a traditional burrata caprese.
