This is a great “go to” meal - simple, fast and super tasty. The pesto is a bit salty, so I’d skip the salt when cooking the chicken and add it at the end after you are able to taste the finished product.

Plenty of fresh, delicious flavor. Love pine nuts and pesto. Took 20-25 minutes to make. Tomatoes better sliced into flat pieces. Arugula was wilted. Awkward to eat. Suggest toasted pesto flatbread as a side with other mixed ingredients.

The amount of pesto doesn't cover the chicken and the entire flatbreads as you see in the photo.
