Chicken thighs are seasoned in our achiote marinade then grilled and shredded. We mix the chicken with roasted poblanos, sliced onions, and a little cheese. The filling is wrapped in flour tortillas then topped with our tomatillo salsa and creamy oaxaca cheese.
On the side is our take on Spanish-style rice made with quinoa and black beans, as well as a scoop of our pickled red cabbage laced with spicy jalapeños and cumin.
