Mom might have made this using leftovers, but we’ve gone out of our way to bring you a fresh, chef-crafted, elevated take on this homey favorite. Free-range Mary’s Chicken is breaded in panko bread crumbs with Parmigiano-Reggiano and parsley and then fried. A layer of fresh mozzarella is added on top and the chicken is baked again until the cheese becomes warm and melted. Fill the French bread roll (the perfect size and shape for chicken Parmesan) with our fresh tomato sauce, baby arugula, and balsamic vinaigrette for a sandwich that tastes like a five-star Italian entree.
