In the Veracruz region of Mexico, local ingredients are used in preparation of Atlantic red snapper. This same recipe translates well for chicken too. I've cooked down onions, poblano chiles, and chorizo to a thick and smoky sauce. When generously spooned over grilled chicken, the whole thing really comes to life. Jasmine rice takes on the remaining sauce, and the bright green beans make a snappy addition.
