Boneless, skinless chicken breast is marinated overnight in chipotle and cocoa, then grilled. This might seem like an odd pair, but both earthy elements mix together to make a wonderful sweet/spicy combination, which is enhanced by the natural char of the grilling process. The chicken is placed on a bed of tomato-infused Spanish rice and plated alongside braised kale and roasted delicata squash. The whole meal is blanketed with a dark mole (mo-lay). A traditional sauce from central Mexico, mole is made by grinding dried chilis, fruits, nuts, and spices together then slow-simmering in a large vessel. After several hours, the flavors combine into a sweet-spicy-savory concoction that has adorned meals since Aztec times.
