Creamy black beans are cooked until smooth and seasoned with cumin and coriander. After you warm the corn tortillas, you'll spread the beans into the center of each one, then top it with some of our maple-glazed and oven roasted carrots. A sprinkle of salty cotija cheese, a few pieces of pickled onions, a scoop (or three) of guacamole, and a small handful of pea shoots put on top and you've got yourself some darn fancy tacos there!
