Our house-made chorizo begins with ground pork marinated with red chilis and Mexican oregano. This gets seared on our grill, with diced potato and scrambled eggs folded in. Some queso fresco gets sprinkled on the filling before being wrapped in a flour tortilla. Deliciously versatile, this dish is small enough to enjoy before heading out to work, but filling enough to keep you going until lunchtime.
