We start with a base of tomato, onion, and a healthy allowance of roasted red peppers, then slow-simmer with vegetable stock. Later, we add a splash of heavy cream and a touch of Calabrian chili. These Italian, oil-packed peppers add a smokey-spicy richness that no off-the-shelf hot sauce can match. This gets puréed nice and smooth, then topped with a traditional giardiniera (a briny mix of olives, capers, carrot, cauliflower, and herbs) and some torn basil.
