We went all-in with Mediterranean flavors here and the end result is a perfect summer lunch or light dinner. Naturally gluten-free chickpea flour is the perfect binder for these fluffy cakes. Baked, then seared, they feature all of the flavors of a great hummus (tahini, garlic, quality olive oil) and are excellent delivery vehicles for the rest of the tasty veggies: arugula, pepperoncini, pickled red onion, and cucumber. The garden freshness is offset nicely by the tangy goat cheese, harissa aioli, and squeeze of lemon.
