Duck Cassoulet Salad

cannellini beans, bacon vinaigrette, brioche
4.1 stars
(45 reviews)
Cassoulet — that classic French dish of stewed meat and beans — gets reimagined as a bright and vibrant salad. It’s prepared with farm-fresh arugula, roasted tomatoes, fennel, and cannellini beans, and served with a side of roasted carrots, crunchy brioche croutons, and whole grain mustard-bacon dressing. But the undeniable star of the dish is a leg of duck, roasted to moist and tender perfection. Munchery sources poultry raised without antibiotics — it’s better for the birds and it’s better for you. We’re excited to feature Mary’s Duck in this dish.

The photo was super deceptive. The duck leg was very small.

What tiny piece of duck leg

Delicious, hearty salad. One recommendation: heat the duck longer than suggested. Also, warm up the dressing.

This was wonderful. Terrific flavor throughout - outstanding salad mix. Don't pay attention to complaints about "fattiness". Duck cassoulet is rich by nature. Duck fat is delicious and it belongs here.

Way too fatty. The arugula also wasn't fresh.
