If you haven’t had the pleasure of trying yuba, sometimes called tofu skin, this is your chance. The thin, tender strips get tossed in a spicy sauce with fresh ginger and soy sauce. They’re served on top of warmed farro with creamy avocado and cool persimmon. All you need is basic kitchen equipment (pots/pans, bowls, a knife, salt, pepper, oil) and around 15 minutes to create this unique vegetarian dinner for two.

Had this once before and loved it. This time the persimmons were not ripe so didn't have much flavor to add to the dish. Still liked it though

Surprisingly delicious!!! My meat and potatoes husband liked this as did my 9 and 11 year old girls. Not one of us liked the idea of the persimmon in it, but we all cleaned our plates!

Omg this was delicious. Never had yuba like this before. This was a brilliant vegetarian meal. I'm not even vegetarian but I would be if every dish tasted like this.
