With the first breath of spring rhubarb begins to show up in local markets. After a long wet winter the bright red stalks of rhubarb are so exciting to see. We combined frozen at their peak strawberries with fresh rhubarb to make a match made in heaven. We top this filling with crispy layers of phyllo dough sprinkled with cinnamon sugar. Serve with a perfect scoop of vanilla ice cream or just on it's own. Welcome Spring!
