The classics never die, but they could use some updating once in a while. Inspired by the French bistro staple, we decided to forgo the butter and egg yolks in traditional BĂ©arnaise sauce for a healthier version made with Greek yogurt. We also chose the leaner flat iron as the steak cut. Together with the sauce, the flat iron has the same flavor profile as the original, but with way less fat, calories, and guilt. Steamed new potatoes and green and yellow wax beans make it a meal.
