Coulotte provides the best of both worlds: it's juicy and tender like a steak, but rich and flavorful like a roast. We marinate it overnight with garlic and shallots, then grill it to mid-rare. Along side is fennel braised in cream, flecked with parmesan, and roasted potatoes. An herbaceous and peppery infused oil combines with the steak's natural juices to make the ultimate sauce.
