An airline chicken breast gets marinated in garlic, rosemary, and lemon, then grilled. It's served alongside a traditional Tuscan panzanella, a summery tomato and bread salad with onion, fennel, and fresh basil. A bright lemon-oregano vinaigrette adds to the flavor. Fun fact: airline chicken breasts get their name from actual airlines! Back in the 50's, they were an elegant entree served during in-flight meals. A decade later, chicken wings surged in popularity as an appetizer. Butchers started separating the drumette from the breast, which meant that the airline-cut was effectively grounded. But, like all things mid-century, airline breasts are coming back in style!

The chicken was good, but I was disappointed in the salad; tomatoes were grainy and the whole salad didn't seem super fresh. Not my fav.
