Tri-tip is a popular cut of meat in California, and for good reason. Not only is the beef full of flavor, but it's extremely lean (i.e. low in fat). We cook this one until medium-rare and then thinly slice it to serve over mixed greens. Toss in the crispy garlic chips, roasted potato rounds, fresh chives, and asiago cheese before drizzling on the house-made garlic vinaigrette.
