In Tuscany, white bean stew is called "ribollita." Traditionally, it is a big pot of soup made with simple garden vegetables like onions, carrots, celery, kale, tomatoes and white beans in a flavorful tomato broth. We add sweet, Duroc pork Italian sausage to the mix as well as springtime fennel. On top is a seared fillet of halibut; the buttery texture of the fish is a perfect addition to the stew.
