I want a salad to be straightforward, clean, and refreshing. No elaborate technique needed, just well- sourced ingredients. During my time at Napa Rose we created a salad around heirloom tomatoes from our garden. The heirloom variety has a firmness and a sweetness that cannot be rivaled, so I've dressed it up with red onions, Point Reyes bleu cheese, a touch of extra virgin olive oil, fresh Thai basil, and a squeeze of lemon. This is the sort of thing that does not need to be improved on.
