Hijiki, a brown seaweed that grows along the Japanese coastline, has long been part of Japanese cuisine, in part for its rich source of essential nutrients. I toss it with edamame, thinly-sliced carrots, tofu and a dressing of soy sauce, mirin and a touch of sake. It is a perfect side for any rolls or sushi!
