You had me at "coconut-infused". Oh yes, this salad's base is coconut-infused quinoa. All that glory is topped with shrimp marinated in honey-chipotle dressing, accented with grape tomatoes, roasted corn, scallions, cilantro and a squeeze of lime. Add in the extra honey-chipotle dressing to taste.
