The Italian island of Sardinia is my inspiration for this dinner. Chicken legs from Murray's Farm in Pennsylvania are seasoned with Italian spices - sage, rosemary, basil and fennel - and then roasted until tender. I pair it with fregola sarda (a Sardinian semolina pasta that is rolled into tiny balls and toasted in the oven). A salad of kalamata olives, cherry red peppers, mushrooms and spring onions is tossed and served atop the fregola sarda for a true Italian experience.

The flavors were very complex and interesting, but the chicken was a bit dry and could be more tender.

Was moist, and a great portion... But we wish skin was crispy. Also close to bone unsure if it was cooked through... But it was delicious.
