My culinary influences are truly pan-Latin and this dish reflects this. A pork loin is sauced with a slightly sweet reduction that incorporates jerk seasonings of the Carribean. Colombian arepas (corn cakes made with ground maize) are sprinkled with cotija cheese for a side dish that contrasts sweet and salty flavors. The pork was too salty and dry. The arepas unfortunately tasted more like really dry cornbread. The sauce threw me off a bit because it tasted like a mix of hoisin sauce and Worcester sauce...
