We looked to the flavors of North Africa for inspiration for this salad. Large pearls of couscous are topped with sweet and savory chunks of roasted kabocha squash, red peppers, romanesco cauliflower, garbanzo beans, and baby spinach leaves. The dressing is green chermoula, an herbaceous and slightly-spicy Moroccan pesto that goes great with just about anything.

I would order this again, for sure! We split one order as a side dish to fish tacos but it would be great on it's own as well. Super filling!

Delicious! Such unique flavors that blend well together in a hearty bowl. My only suggestion is that the black beans are a little too crunchy and need a bit more cooking! Otherwise, very tasty!
