Kuri squash may not be as sweet as its cousin, the butternut, but it has a nuttier flavor all its own. We hard-roast these pumpkin-like squashes until the flesh is soft enough to scoop out with a spoon. This gets simmered and blended with stock and cream, then hit with a touch of Latin spices like smoked paprika, cumin, and Peruvian Aji Amarillo (yellow chili spice). Roasted pumpkin seeds, cilantro, and a spicy crema infused with more Aji Amarillo and lime, are the ultimate garnishes.
