Lentils and chickpeas pack a protein punch and serve as the base of this salad. Peppery arugula, tangy feta cheese, pickled red onion, and tender artichoke hearts bring a bright, fresh balance. For the dressing, we went with the classic Mediterranean combination of extra virgin olive oil and lemon and also added some za'atar- a zesty Middle Eastern spice blend with thyme and sumac at its base.
