My grandfather Bernardo was from the town of Leon. This city in northwestern Spain has a distinct local cuisine that prides itself in world-class meat, cheese, and wine. These culinary influences can be found in this lean pork tenderloin that is stuffed with Serrano ham, garlic, onions, olives and parsley to keep the meat moist. I've also created a chimichurri made of basil, mint and orange juice to dress the pork. Pair this with a Leonese wine (Bierzo or Tierras de Leon) for a regional Spanish comida. Salud!

Eating the flavors of the stuffed pork covered with sauce and couscous with dried cranberries in the same bite was delicious. The asparagus was perfectly cooked but needed flavor so I added salt a tiny bit of butter and lemon juice. 4.5 stars!
