This is our spin on the popular Italian pairing of cured meat and melon. We went with sweet coppa, which is prosciutto's leaner, more robustly-flavored cousin. The coppa gets mixed in with local cantaloupe and honeydew, with marinated mozzarella for added richness. Shaved red onion and mint are added to balance the flavors, which are tied together with a tangy balsamic reduction and a mint vinaigrette.
