This is inspired by a dessert my mom made that everyone loved so much it never made it to the table -- my guess is that the original recipe came off the box of vanilla-flavored Jello pudding, or maybe the tub of Cool Whip. The 2014 version is all from scratch and a little boozy.

Absolutely fantastic. I can't rave about this more: decadent, flavorful, rich. The graham flavor brought it down to earth too--you could definitely see how it was inspired by a humbler dessert.

I enjoyed this "eclair cake", but it didn't satisfy the craving for the chocolate eclair experience I hoped for when I discovered it on the menu. What I missed most was the vanilla custard component. Still a tasty treat for what it is.
