Salmon isn't exactly native to Mexico or the American southwest, but it still pairs perfectly with those bold, assertive flavors. We've combined guajillo, ancho, and arbol chiles to make the perfect earthy/spicy sauce for Pacific Northwest salmon. The pickled red cabbage and squeeze of lime cut through the richness and balance the sauce perfectly. Cilantro rice and cumin scented black beans round out the meal. Fill the white corn tortillas with some of the sauteed corn, pickled jalapeños, and a drizzle of avocado salsa verde and you're good to go!
