We've sourced some great cured meats from purveyors in Seattle and Portland who insist on cutting no corners and doing things the old-fashioned way. "Salami Capri" from Olympia Provisions is based on a traditional Italian-style salami made from red wine and fennel. "Capicola," also from OP, is a cooked, whole-muscle cut with a mild flavor and soft mouthfeel. Last, but not least, is "soppressata" from Salt Blade Meats in Seattle. This style is redolent with notes of white wine and red pepper. There are sweet notes up front and a slight spice on the back. Enjoy this artisanal array with tangy cornichons, Dijon grain mustard, and garlic crackers on the side.
