While nachos are considered an Americanized dish, "queso fundido" is all Mexican. Different types of cheeses can be used, depending on the region. We like the variety from Oaxaca (wa-ha-ka), a state in southern Mexico. Their regional cheese is a soft, pulled white cheese, similar to mozzarella, that gets silky-smooth when melted. We've added a pinch of chipotle chili powder and worked in some housemade chorizo and roasted mushrooms for more savory flavor. The pickled onions and jalapeños add a touch of brightness and heat. Just in time for fall, whether you like to watch football or <i>futból</i>, this is sure to be a game-day favorite

It's hard to go wrong with queso dip but I would say this was 4 stars only because the texture seemed a little off to me. The chips were amazing.
