Pao de queijo is a traditional Brazilian bread that's like a popover, a gougères, and a mochi bun combined. They're made with tapioca flour, which makes them completely gluten-free. They puff up in the oven to get a nice crispy exterior, while the inside remains moist, chewy, and gloriously cheesy. A mix of Parmesan and Gruyère cheeses are blended into the batter and they're seasoned with black pepper, nutmeg, and a hint of cayenne for just a little kick.
They're great on their own or as an accompaniment to meat dishes. Each order comes with 2 cheese buns.
