An ode to vegetables! Eggplant, tomatoes, and yellow and green squash are slowly simmered with a splash of balsamic vinegar and a few olives for a tangy sauce. It gets served over fresh, wide noodle pappardelle. Top it with some of the fresh basil and shaved Parmesan cheese. Enjoy!

This was super delicious! I was literally scraping my bowl the flavor was that tasty! Only concern is I don't understand how there could be so much fat and so much protein. But well worth it YUM

The pasta itself was very good, but the caponata was not enough to moisten it. The dish was very dry. I had to add additional moisture myself.

Tasted awesome, just either too much pasta or not enough sauce (basically sauce to pasta ratio was off). Otherwise it was amazing.

Picture does not accurately show the dish - dominant flavor in the actual dish is tomato sauce whereas the picture shows hardly any.

Pasta was perfectly cooked and the sauce was a nice touch, flavorful but not overpowering. Makes being a vegetarian fun!
