If you haven’t already had the pleasure, we’d like to introduce you to our new favorite pasta, fregola. Similar in size and shape to pearl couscous, these little beads of pasta are toasted until nutty, then you’ll cook them in a flavorful broth so they soften until perfectly al dente. Served with fresh spring asparagus, peas, and mint, all that’s needed is the final dollops of creamy ricotta cheese. All you need is basic kitchen equipment (pots/pans, bowls, a knife, salt, pepper, oil) and around 15 minutes to create this fabulous dinner for two.
