Peri Peri Grilled Chicken Bowl

Centuries ago, Portuguese sailors transported chilis from the New World to their colonies in Africa. These peppers thrived in the tropical climate and took on a new flavor, all their own. When these chilis were ground with garlic, lemon juice and herbs, peri-peri sauce was born. We use it here by marinating boneless, skinless chicken breast, then giving it a sear on the grill. It is placed over a bed of brown rice tossed with linguiça (a spicy sausage), collard greens, black-eyed peas, roasted red peppers, and tomato. Enjoy with a squeeze of lemon and some more peri-peri sauce on the side.
