This pork loin is slow-roasted to retain its natural juices while keeping a bit of pink in the center. This cut is marinated with an orange glaze for a sweet and savory edge and a side of pungent pesto sauce is included to complement these flavors. I've also created a side dish that is similar to a Southern succotash but made with roasted corn, kale, and black-eyed peas for good luck.

Pork was great. Too much kale in the peas, including long kale ribs that should have been discarded.

This was okay...there was an awful lot of kale but it was tasty, mainly because of the pesto.

The pork was dry. A gravy would have been an upgrade from the green sauce.
