Pork loin is brined, then marinated with fennel and citrus to stay juicy during the cooking process. It gets served over braised escarole (which is romaine lettuce's cookable cousin) along with plump butter beans, caramelized onion, and roasted carrots. A pleasantly tart sauce made from fig preserves and a splash of Marsala wine is a perfect complement to the rest of the flavors.

Pork was great, but there seemed to be a disproportionate amount of beans for the meal as a whole. Presentation was sloppy.
