Endive, those little bulbs of leafy greens with a bitter-sweet flavor get roasted until tender and caramelized. It served with steamed brown rice, dried figs, and roasted peanuts. Serve it with a handful of peppery arugula to sprinkle over the top and some sweet orange segments. Gribiche sauce made with farm-fresh eggs gets spooned over the top.
